Well, not really. I can appreciate that to some, it has deep and diverse meanings; to me, it looks like something a 4th grader might muster up in elementary art class. I have come to discover this to be my opinion after visiting the Louisiana Museum of Modern Art.


There were a few exhibits that were actually really cool, but also an equal amount of exhibits that just freaked me out. Wanting to get out of said exhibits fast, I only have photos of the cool exhibits.








I wouldn't say the museum is an absolute must see, but worth a visit if you're really bored on a Friday afternoon. After the museum, Chiara and I went to Shalini's place at Basecamp with snacks and watched the movie "Don't Mess with the Zohan".
One thing I have learnt here is how to be social on a budget. It's no secret that existing in Copenhagen is expensive, especially for eating/drinking/getting coffee. Therefore we've all gotten very good at "foodshare dinners" where essentially we just host dinners or brunches at different people's places. For instance, on Tuesday we had dinner at Basecamp, consisting of salad as well as zucchini, asparagus and sweet potato risotto followed by a chocolate cake baked by yours truly. Not only are these meals affordable for everyone, but they also encourage us all to be social!

This morning Chiara, Shalini and I had brunch at our college in Emdrup. We've gotten used to the Danish breakfast and so had a buffet of black coffee, muesli with natural yogurt and fruit, soft boiled eggs and open faced sandwiches.

After brunch, Shalini and I headed to the foodshare to pick up some more vegetables for cooking. I managed to snag a whole bag of pre-peeled potatoes, which I've now promptly sliced and frozen to be fries, as well as celery, parsley, tomatoes, cucumber, leek, turnips, beetroot, bread etc. I've decided that tomorrow I'm going to attempt to make homemade ravioli with a caramelised leek, onion, crushed pine nut and sweet potato filling. This is really good to make in a large batch and then freeze, so wish me luck! I've also created/modified a recipe (not very original) for one of the best dahls ever.

SOPH'S BEST DAHL EVER
For the recipe you'll need olive oil, brown onions, split red lentils, sweet potato, spinach, tomatoes, curry powder, garam masala, (I often cook without as it's hard to find), vegetable stock cubes, paprika, cumin, chilli flakes, bay leaves, salt and coconut milk/light Greek yogurt.
I start by browning the diced onion in olive oil, then toss in as much lentil as I feel is appropriate, followed by a stock cube and some water. I let the mixture simmer until the lentils are about halfway done and then add the cubed sweet potato. I allow the whole mixture to keep simmering whilst adding the curry powder, garam masala, paprika, cumin, chilli flakes, bay leaves and salt. In a typical fashion, I don't really measure anything but more so go off amounts that appeal to me. I make it as mild or spicy as I feel. I stir the dahl a few times, and then add spinach (often frozen as it keeps for longer) and diced tomato. When everything is nice and soft, I turn off the heat and let it cool down a little. I mix in a small amount of Greek yogurt or alternatively coconut milk at the end, as it really brings the whole dish together. This'll then be served with rice! Really easy and great to make in big batches to freeze.
This evening, Shalini and I hired a Kayak down on the canals in central Copenhagen and went for a paddle for about an hour. It was really fun, but I got quite wet. Great way to see the city! We bought some flowers for our apartments on the way home.


Copenhagen is coming along slowly but as I have really limited contact hours at university I'm finding myself quite bored. Jamie will be here in three weeks, and will be staying for about 10 days so I'm really looking forward to that! I'm trying to look at cheap flights/buses to places on the weekends on my limited budget but that's not going amazingly so we'll see what I come up with! My hours this block at uni are so few as I'm only taking one subject worth 7,5 ECTs (European credit transfers), but next block I'm taking Immunology which is worth 15 ECTs, meaning that it'll be a much more intense subject. Thus, I'm not taking this free time for granted.
Currently I'm going to gym classes through the university three times a week (Tuesday and Thursday morning, Wednesday evening), and looking to sign up for one more weight lifting session on Thursday evenings as well as volunteering with Food Sharing Copenhagen to keep me busy. It's going well, the managing of my time, but I still have three days off from Friday to Sunday where I'm free to do as I please.
